Low carb creamy garlic prawns

Ingredients

  • 1 tablespoon butter
  • 1 tablespoon oil – coconut/macadamia
  • 2 cloves garlic diced
  • 2/3 cup chicken stock
  • 1/2 cup cream
  • 2 teaspoons curry powder
  • 500gms prawns
  • 1 tablespoon parsley
  • Pinch of salt and pepper
  • 1/2 a red onion diced

Method

Cook butter, oil and garlic in a pan until garlic starts to brown.

Add stock, cream, curry powder, salt and pepper. Stirring constantly until sauce boils and thickens.

Add prawns, simmer until prawns are cooked through.

Stir in parsley and onion.

Serve 🙂
