Chicken and bacon bake

Ingredients

  • 500g chicken thigh
  • 6 slices middle bacon
  • 1/2 capsicum
  • 1 red onion
  • 1/2 cup mushroom
  • 1/2 cup bread and butter cucumbers
  • 1/2 cup carrot
  • 1/2 cup courgette
  • 2 cups cream
  • 2 teaspoons paprika
  • salt/pepper to taste
  • 150g brie cheese

Method

Preheat oven to 200 degrees Fan Bake.

Cook chicken and bacon in a pan and set aside.

Combine cream, paprika and salt/pepper in a pan and lightly boil, stirring constantly to avoid it sticking. Cook until it thickens significantly.

Spread the chicken and bacon across a deep oven tray and add all vegetables evenly on top.

Cover meat and vegetables with cream mixture.

Place thinly sliced brie on top and put in the oven.

Cook for 30 minutes or until cheese is golden brown.
