Brendon's brownies

Ingredients

  • 3 scoops chocolate protein powder – I used Scitec 100% whey
  • 2 x high protein, low carb, low fat protein bars – I used choc mint Quest bars
  • 300gms organic apple sauce – found in the baby food section of supermarket
  • 1/3 cup Mother Earth Natural peanut butter with LSA blend
  • ¼ teaspoon pink himalayan rock salt
  • ½ teaspoon vanilla extract
  • 2 tablespoons cocoa powder
  • 1 tablespoon walnuts

Method

Pre heat oven to around 180 degrees.

In a medium bowl stir apple sauce, peanut butter and vanilla extract until well mixed.

Stir in protein powder, cocoa powder and salt until thick.

Cut both protein bars into tiny little pieces, stir half into the mixture.

Find a small loaf baking tray, roughly 15cm long, 5 cm wide and 3-5 cm deep, line this with baking paper.

Pour the mixture in evenly, crush up your walnuts with the remainder of your protein bar and sprinkle on top.

Bake for around 18-23 minutes depending on the depth of your tray and how gooey you like the inside.

Cut into 6 pieces.  Add 2-3 tablespoons probiotic yoghurt and enjoy !!
