Ingredients
- 3 chicken breasts sliced horizontally (should get 3 slices per breast)
- 9 pieces of middle bacon (rind off)
- 1 block camembert cheese thinly sliced (110-125gms)
- 1 clove garlic finely diced
- ½ cup brown onion finely diced
- ½ tub basil pesto

Method
Pre heat oven to 200 degrees fan grill. Place bacon on a board & put one slice of chicken on top of each piece of bacon. Add all fillings – cheese, garlic, onion, pesto & roll it up with bacon fully wrapped around chicken. Use two pieces of string to tie & hold the roll together. Place in the oven for 20 minutes. Take out and sit for 2-3 minutes, remove string and slice into pieces. Serve with salad.
Creamy Garlic & Mushroom Sauce
Ingredients
- 2 cups mushrooms
- 2 cloves garlic
- ¾ cup onion
- 60mls cream
- 60gms butter
- 2 cups diced spinach
- Salt & Pepper
Method
Saute onion, garlic, mushroom & butter. Season with salt & pepper and cook until onion slightly browns. Add cream & let it slowly boil until cream thickens. Add spinach & cook for 1-2 minutes longer. Remove from heat, put in a nice serving instrument & pour over chicken & bacon roulade generously.
