Ingredients
- 2 packets yellow noodle
- 1/4 cup sugar
- 1/2 cup white vinegar
- 1/4 cup soy sauce
- 2 Tbsp tamarind paste
- 2 chicken breasts, diced and lightly cooked
- 1 Tbsp olive oil
- 1 1/2 tsp garlic, diced
- 4 eggs
- 1 1/2 Tbsp sugar
- 1 1/2 tsp salt
- 1/2 cup cashew nuts
- 1 cup bean sprouts
- 1/2 cup chives, chopped
- 1 Tbsp paprika
Method
Ready noodles per instructions on the back of packet.
Whisk sugar, vinegar, soy sauce and tamarind paste in a saucepan over medium heat. Bring to a simmer, remove from heat.
Heat 1 Tbsp olive oil and garlic in a large skillet or wok over medium high heat. Stir in eggs, scramble. Add chicken and rice noodles, stir to combine.
Stir in tamarind mixture, 1 1/2 Tbsp sugar and salt, cook until noodles are tender 3-5 minutes. Stir in nuts, cook until heated through and remove from heat.
Add chives, bean sprouts and paprika to the mix, toss thoroughly and serve.
