Ingredients
- 1 whole egg, white and yolk separated
- 1 egg white
- 50mls unsweetened almond milk
- 1/4 cup rolled oats
- 1 scoop chocolate whey protein powder
- 50gms banana
- 1 teaspoon baking powder
- 1/2 teaspoon rock salt
- sprinkle of cinnamon
- 50gms unsweetened greek yogurt
Method
Place both egg whites in a bowl and mix with a beater until soft peaks form.
Add egg white mixture and all other ingredients apart from yogurt to a blender and combine well.
Once you have achieved a smooth consistency heat a medium sized pan with extra virgin olive oil to medium heat and pour quarter of the mixture in the centre of the pan. Let it cook until it looks like bubbles are about to form on the pancake and flip. Another minute cooking like this and your pancake is done 🙂
Repeat this process until you have 4 pancakes or all of the mixture is gone…
Place pancakes on top of eachother and add your yogurt. Feel free to sprinkle some cinnamon over top.
Serve while warm 🙂
