Ingredients
- 2 gluten free pizza bases
- 1 small tube (1tbsp) pizza sauce
- 1 red onion, diced
- 4 button mushrooms, thinly chopped
- 6 cherry tomatoes, halved
- 1 capsicum, thinly sliced
- 1 large handful spinach, chopped
- 2 garlic cloves, finely diced
- 1/2 red chilli, finely diced
- 100gms pastrami, roughly chopped
- 100gms hot pork, roughly chopped
- 100gms cooked shredded chicken/beef or lamb
- 1 tub cottage cheese
- Your choice of sauce – apricot or BBQ is delicious
Method
- Preheat oven on Fan Bake @ 200 degrees celcius.
- Place bases in oven to slightly cook before adding toppings.
- Add all toppings (minus the sauce) to a sealable container and shake well to combine.
- Spread pizza sauce across bases and sprinkle toppings evenly.
- Add dollops of cottage cheese to both pizzas and drizzle over sauces.
- Place in the oven for 30-45minutes or until cooked the entire way through.
- Cut into quarters and serve while hot.
