Ingredients
- 6 potatoes, boiled and mashed
- 1/2 cup unsweetened almond milk
- 1/4 cup cream
- 500gms lamb or beef mince
- 1 diced brown onion
- 1 can Watties tomatoes (400gms)
- 1 x Maggi Mince Cottage Pie sachet
- 2 cups frozen mixed vegetables
- Himalayan rock salt/pepper to taste
- Cottage cheese
Method
Preheat oven to 200 degrees Celsius, Fan Bake.
Mix almond milk and cream into mashed potatoes until light and fluffy. Add a good dash of pink rock salt to taste.
Prepare a pan to medium heat and cook mince and onion until brown.
Add sachet and tomatoes, stirring to combine.
Finally, add mixed vegetables and combine again.
Weigh your meat portion into small ovenproof cups, then add a small portion of cottage cheese and top with your weighed portion of mashed potato mixture.
Place in precooked oven for 15 minutes or until slightly browned on top.
TOP TIP – This mixture will serve one adult man, one adult woman and also have leftovers for a lunch meal each the next day.
