Ingredients
- 1 raw beetroot, grated
- 5 carrots, grated
- 3 tablespoons pumpkin seeds
- 3 tablespoons sunflower seeds
- 3 tablespoons raisins (take these out if you want to make it carb free)
- 2 tablespoons fresh mint leaves, chopped
- 2 tablespoons macadamia oil
- 1 tablespoon apple cider vinegar
- Zest of 1 lemon
Method
Add beetroot, carrot, seeds, raisins and mint leaves to a large mixing bowl. Toss all ingredients together well.
Mix macadamia oil, apple cider vinegar and lemon zest through the rest of the salad mixture.
Once it has been well combined, serve alongside a good portion of meat.
